Ingredients

 

  • 2 salmon steaks
  • Salt and pepper
  • Olive oil
  • ¼ cup olive oil
  • 3 cups grape tomatoes
  • ¼ cup chopped basil
  • 2 garlic cloves
  • 2 teaspoons capers
  • Salt and pepper

Instructions

 

  • For the tomatoes: Preheat the oven to 450°F (230°C). In a medium bowl, combine the grape tomatoes, whole garlic cloves and 1/4 cup olive oil. Season lightly with salt and pepper and toss to coat.
  • Spread the tomatoes and garlic in a single layer in a baking dish. Roast for about 30 minutes, until the tomatoes are blistered and slightly caramelized. Remove from the oven, stir in the chopped basil and capers, then set aside.
  • To cook the salmon: Lightly brush each salmon steak with olive oil and season both sides with salt and pepper.
  • Grill the salmon over medium-high heat for about 3 minutes per side for medium-rare, depending on thickness. The exterior should be nicely seared while the center remains just slightly translucent. Serve topped with the roasted grape tomatoes and any pan juices.
