Apple Drop Biscuits
Apple drop biscuits make a wonderful addition to breakfast, brunch, or as a snack. This simple, adaptable recipe can lean sweet or savory depending on the seasonings you choose. The texture is fluffy and the apple pieces add a pleasant burst of freshness in every bite.
Why do they call them drop biscuits?
They’re called drop biscuits because the dough is dropped by spoonfuls onto a baking sheet rather than being rolled and cut. This method speeds up the process and keeps the biscuits tender and rustic in shape—perfect for quick baking when time is limited.
How to Store Drop Biscuits
Store the biscuits in an airtight container. At room temperature they will stay fresh for about 2 days; refrigerated, they will keep for up to 5 days. Rewarm in a low oven or microwave before serving for best texture.
What if I don’t have buttermilk?
If you don’t keep buttermilk on hand, you can make a quick substitute. Combine 1 cup of milk with 1 tablespoon vinegar or lemon juice and let it sit for a minute to slightly thicken and sour. While cultured buttermilk is ideal, this homemade version works well in the recipe.
Making perfect apple drop biscuits
Follow these tips to get consistent results:
Measure the flour correctly – Spoon the flour into the measuring cup and level it off to avoid packing. Too much flour can make biscuits dense and dry.
Prepare the apples – The recipe calls for diced apples for little pockets of fruit. If you prefer, you can grate the apples instead using a hand grater or food processor for a different texture.
Variations to Apple Drop Biscuits
Use a cast iron skillet. Instead of a baking sheet, grease a cast iron skillet with 2 tablespoons of butter and drop the dough into the skillet before baking for a slightly different crust and presentation.
Make them sweet. Add 1 tablespoon cinnamon and 1 tablespoon sugar to the dry ingredients for a sweeter, dessert-style biscuit. Finish with a cinnamon-sugar or cream glaze if desired.
Make them savory. Stir in 1 tablespoon onion powder and 1/2 cup grated cheddar for a savory version. The combination of apple and cheddar creates a deliciously balanced side dish.

Ingredients
- 2 cups all-purpose flour
- 1 ½ cups peeled and diced Envy™ Apple (1 large Envy™ apple or 2 small Envy™ Apples)
- 1 Tbsp baking powder
- ½ cup (1 stick) cold salted butter, diced
- 1 tsp kosher salt
- 1 cup buttermilk (or 1 cup milk + 1 Tbsp vinegar)

How to Make Apple Drop Biscuits
Preheat the oven to 425°F (218°C).
In a large bowl, whisk together the flour, baking powder, and salt.

Add the diced cold butter and cut it into the dry ingredients with a fork or pastry cutter until the mixture resembles small peas or coarse crumbs.

Stir in the peeled, diced Envy™ apple.
Add 1 cup of buttermilk and stir just until combined; the batter should be lumpy—do not overmix.

Drop large mounds onto a parchment-lined baking sheet (about a 2 oz scoop or roughly ¼ cup per mound).
Bake at 425°F for 18–22 minutes, until the biscuits are golden brown.
Brush with melted butter, if desired, and serve warm.
