Keeping a few homemade snacks in the fridge or freezer is a lifesaver, and these Peanut Butter Chocolate Flapjacks are one of my go-tos. They’re made from just five simple ingredients and are easy to adapt if you need a nut-free version for allergies. They’re hearty, portable and hit the sweet spot for an afternoon pick-me-up for both children and adults.

Start by melting peanut butter, butter and honey together in a large microwave-safe bowl. Stir until smooth, then fold in the oats until they’re fully coated. This simple base is chewy and slightly crunchy, especially if you use crunchy peanut butter.

Transfer the oat mixture into a lined baking dish — a 24cm square dish works well — and press it down firmly with the back of a spoon to compact it. This helps the flapjacks hold together after baking.

Bake for about 15 minutes at 180°C fan (or until the top turns golden and slightly crisp). While the base cools, prepare the topping by gently melting together peanut butter and milk chocolate.

Spread the melted chocolate and peanut butter evenly over the cooled flapjack base, then place the dish in the freezer for 15 minutes. This quick chill sets the topping and firms up the base, so the squares cut cleanly without crumbling.

Cut the slab into nine large squares, or make smaller portions if you prefer. These keep well in the fridge for up to five days and can be frozen for longer storage.

I used crunchy peanut butter to add texture from small peanut pieces both in the flapjack and the topping, but smooth peanut butter works perfectly if you prefer a softer texture. For a nut-free alternative, use a peanut-style spread such as Wow Butter to get a similar taste without nuts.

For the flapjacks:
- 120g peanut butter
- 60g butter
- 50g honey
- 200g oats
For the topping:
- 70g peanut butter
- 100g milk chocolate
Instructions
- Preheat the oven to 180°C fan and line an oven dish with parchment paper (24cm square works well).
- Melt the peanut butter, butter and honey together in a microwave-safe bowl.
- Once melted, stir in the oats until evenly combined.
- Transfer the mixture into the lined dish and press down firmly with a spoon to compact it.
- Bake for 15 minutes, or until golden on top.
- Make the topping by melting the peanut butter and chocolate together in a small bowl.
- Spread the melted topping evenly over the flapjack base.
- Freeze for 15 minutes to set the topping and firm up the base.
- Cut into 9 large squares or smaller portions as preferred.
Notes
Store in the fridge for up to 5 days. For longer storage, freeze for up to 2 months in an airtight container or freezer bag. Defrost at room temperature for 1–2 hours.
