How to make a Greek chicken and rice bowl

Follow these clear steps to prepare the one-pan chicken and rice, plus the salad and tzatziki.

1. Season the chicken: Place the thighs in a wide bowl. Mix half the dried oregano, paprika, cumin, garlic powder, salt and pepper in a small bowl. Sprinkle half the seasoning mixture over the chicken, turn the pieces, and sprinkle the remaining mix over the other side to coat evenly.

2. Brown the chicken: Heat about 3 tablespoons of olive oil in a wide, non-stick pan over medium-high heat. Add the seasoned thighs and brown a few minutes on each side until nicely colored. Transfer the browned chicken and any juices to a bowl and set aside.

Instructions

  1. Put the chicken thighs in a wide bowl. Mix 1 tablespoon oregano with the paprika, cumin, garlic powder, salt and pepper. Sprinkle half the seasoning over the chicken, turn the pieces and sprinkle the rest over the other side so they are well coated.
  2. Heat 3 tablespoons olive oil in a wide non-stick pan over medium-high heat. Brown the chicken a few minutes on each side, then transfer the browned pieces and any juices to a bowl and set aside.
  3. Mix the chicken broth with the remaining oregano, lemon zest and lemon juice in a jug.
  4. Add the remaining tablespoon of olive oil to the pan and cook the chopped onion for a couple of minutes until softened. Stir in the uncooked rice until coated.
  5. Pour the broth mixture over the rice, stir, then lay the browned chicken evenly on top. Cover the pan with a lid, bring to a boil, then reduce to medium and cook for 20 minutes until the liquid is absorbed, the rice is tender and the chicken is cooked through.
  6. While the rice cooks, prepare the salad by combining diced tomatoes, cucumber, red onion and feta; drizzle with a little olive oil if desired. Make the tzatziki by mixing yogurt, cucumber, garlic, dill and lemon juice and seasoning to taste.
  7. When ready, fluff the rice gently with a fork and sprinkle chopped parsley over the top if using. Divide the rice and chicken into bowls, add a generous scoop of salad and a spoonful of tzatziki. Serve with warm pita and lemon wedges.
