GJ’s Huli Huli Chicken

If you’re in Hawaii on a Thursday, Friday, or Saturday, you might be in for one of the island’s most memorable meals. GJ’s Huli Huli Chicken sets up in different locations around the Big Island: Thursdays at the Hawi Welcome Center parking lot on the east side of Waimea, Fridays in the Blue Dragon parking lot near Kawaihae Harbor on Akoni Pule Highway, and Saturdays in the Kamuela Liquor parking lot in Waimea. Follow the scent of smoky roast chicken along Mamalahoa Highway or Akoni Pule Highway — you’ll often smell it before you see the stand.

Owner Gil Tabafunda transformed an old truck bed into a roasting trailer, using charcoal to power a large rotisserie. The grill turns succulent chickens and ribs (both beef and pork) until their skins are caramelized and the meat is juicy. Portions are generous: a half chicken and a rice noodle salad make a satisfying meal for two, though you may be tempted to keep it all to yourself. Locals and visitors agree this is one of the best food decisions you can make while visiting the area.

GJ’s is popular and tends to sell out, so arrive early. If the wind is in your favor, the smell will lead you straight to the stand.
