Simple Instructions

Make the Buffalo Sauce

Melt butter in a small saucepan over medium heat, then whisk in the hot sauce until combined. Remove from heat and let the sauce cool slightly.

Prepare the Buffalo Chicken

Once the sauce has cooled, stir in the shredded chicken and blue cheese crumbles until evenly coated. Set aside.

Assemble the Sandwiches

Butter one side of each slice of bread. On the unbuttered side, place a slice of pepper jack, about 1 cup of the buffalo chicken per sandwich, another slice of pepper jack, and some thinly sliced red onion. Top with the remaining slice of bread, buttered side facing out.

Cook the Grilled Cheese

Heat a large skillet over medium-high heat. Add one or two sandwiches, depending on space, and cook 3–4 minutes per side until the bread is golden and the cheese has melted. Serve warm with blue cheese dressing if desired.

Storage

Ingredients

  • ½ cup Franks Buffalo Sauce
  • 4 tablespoons butter, divided
  • 8 oz. cooked shredded chicken (~2 cups)
  • 1 oz blue cheese crumbles (~1 tablespoon)
  • 4 slices white sandwich bread
  • 4 slices pepper jack cheese
  • ¼ red onion, thinly sliced

Instructions

Buffalo Sauce

  • In a small saucepan, add 2 tablespoons of butter and heat over medium until melted.
  • Slowly pour in the hot sauce, whisking constantly until combined. Remove from heat and let cool slightly.
  • Once cooled, stir in the shredded chicken and blue cheese crumbles. Set aside.

Grilled Cheese

  • Spread butter on both sides of each slice of bread.
  • On two slices of bread, place a slice of pepper jack, 1 cup buffalo chicken, another slice of pepper jack, and some red onion. Top with remaining bread slices.
  • Heat a large skillet over medium-high heat and cook the sandwiches 3–4 minutes per side until golden and the cheese is melted.
  • Serve hot with blue cheese dressing if desired.

Tips & Notes

  • The sauce only needs to cool enough to avoid burning when handling; it doesn’t have to be cold.
