I often find myself turning leftover ingredients into something delicious. After making a mango tiramisu, I discovered a half-tin of mascarpone hiding on the top shelf of my refrigerator. I searched for ideas, skimmed through Pinterest and blogs, but nothing quite clicked.

One relaxed weekend, after watching a powerful film and following a few random videos, I landed on the perfect solution: a simple, rustic three-ingredient cheesecake. I came across a viral video of a three-ingredient Japanese soufflé cheesecake that looked impossibly light and fluffy. Inspired, I adapted the concept to use mascarpone in place of cream cheese.

The three main ingredients are white chocolate, a soft cheese, and eggs. I chose mascarpone because of its rich, mellow flavor—less tangy than cream cheese, and closer to my taste. The result was delightfully soft, subtly sweet, and wonderfully smooth: a cheesecake with cloud-like texture and restrained sweetness.

I also simplified the baking process. The cake is baked gently in a water bath, but rather than varying oven temperatures, I kept a steady 160°C (325°F) throughout to make the method more forgiving and fuss-free. The cake did not rise as tall as some versions, possibly due to pan size or small technique differences, but it still had an appealing height and an ethereal, melt-in-your-mouth crumb.

This cheesecake sits somewhere between a Japanese cotton cake and an Italian-style mascarpone dessert. Whether that makes it a fusion or slight blasphemy in the cheesecake world is up for debate, but tastefully it is hard to argue with. The texture is one of the lightest I’ve had: soft, airy, and decadent without being heavy.

Ingredients

  

  • 120 grams or 1/2 cup white chocolate
  • 120 grams or 1/2 cup mascarpone cheese , at room temperature
  • 3 eggs , separated into yolks and whites

Instructions

 

  • Prepare a 6-inch round cake pan by lining the bottom and sides with parchment paper. Preheat the oven to 160°C (325°F). Bring water to a boil and then reduce to a simmer for the water bath.
  • Chop the white chocolate finely and melt it gently in a double boiler or short bursts in the microwave, stirring frequently until smooth.
  • Stir the mascarpone into the melted white chocolate until the mixture is homogeneous and silky. Allow it to cool slightly so it is warm but not hot.
  • Whisk in the egg yolks, one at a time, until fully incorporated into the chocolate-mascarpone mixture.
  • In a clean bowl, beat the egg whites with a handheld or stand mixer on medium-high speed until firm peaks form. This can take several minutes—patience yields the best lift.
  • Fold about one-third of the whipped egg whites into the chocolate-mascarpone-yolk mixture to lighten it. Use a gentle folding motion to keep as much air as possible.
  • Gently fold in the remaining egg whites in two additions until the batter is smooth and uniform, taking care not to deflate the mix.
  • Pour the batter into the prepared pan and tap the pan lightly on the counter to release any large air bubbles.
  • Place the cake pan inside a larger roasting pan. Carefully pour the hot water into the outer pan until it reaches about halfway up the sides of the cake pan to create a gentle steam environment while baking.
  • Bake at 160°C (325°F) for 40–42 minutes. The top should develop a light golden color and the cake will wobble slightly in the center when done.
  • Allow the cheesecake to cool completely in the pan before removing. Chilling for a few hours improves the texture and makes slicing cleaner.

Notes

Keep refrigerated until serving. The cheesecake will stay good for up to 3 days when wrapped or stored in an airtight container.

You can double the recipe to serve more people—use a larger pan and adjust the baking time accordingly.

Both pure white chocolate and couverture white chocolate work well; choose a quality chocolate for the best flavor.

If you prefer a slightly tangier cheesecake, swap mascarpone for cream cheese. The texture will be different but still delicious.

If using a 7- or 8-inch pan, bake for about 35–40 minutes; the cake will be slightly shorter but still lovely.
