This dark chocolate granola bark combines granola, nuts, coconut, and dried cherries mixed into and sprinkled on top of rich dark chocolate for a crunchy dessert or snack you’ll reach for again and again.
Last August I returned from Food Blog Forum in Asheville, NC with a giant block of chocolate — easily a couple of pounds. Over the past eight months I’d chipped away at it during dessert emergencies, but a substantial portion still occupied half a pantry shelf. One night the idea struck: dark chocolate granola bark.
I love granola and I love chocolate, so why not combine them into an easy snack that also solved my oversized chocolate problem? Instead of choosing between a square (or five) of dark chocolate or a bowl of granola, I can now grab a piece of this bark and have both textures and flavors in one bite.

To keep one household member uninterested so I could eat most of it myself, I used a peanut butter ’n dark chocolate protein granola as the mix-in. Between the dark chocolate base and the granola’s chocolate bits, it was guaranteed to be too chocolate-forward for the chocolate-averse, leaving me plenty to enjoy. The granola adds a satisfying crunch and a hint of peanut butter, while coconut flakes, sliced almonds, and dried cherries bring extra texture and bright flavor to every piece.

Unexpectedly, having a partner who dislikes chocolate has its perks — no dessert-stealing at home means more bark for me. This recipe is simple, makes a great make-ahead treat, and is easy to customize with your preferred granola or toppings.
Dark Chocolate Granola Bark

Ingredients
- 12 ounces dark chocolate, 60% or higher, chopped
- 1 tablespoon coconut oil
- 1/2 cup peanut butter ’n dark chocolate protein granola, plus more for topping
- 1/4 cup unsweetened coconut flakes, plus more for topping
- 1/4 cup sliced almonds, plus more for topping
- 1/4 cup dried tart cherries
- 1 tablespoon chia seeds
Instructions
- Place the chopped chocolate and coconut oil in a heatproof bowl. Bring a couple of inches of water to a simmer in a medium saucepan, set the bowl on top, and gently stir until the chocolate and oil are fully melted and smooth.
- Stir in the granola, coconut flakes, sliced almonds, dried cherries, and chia seeds until everything is evenly coated.
- Line a baking sheet with parchment paper and pour the chocolate mixture onto it. Use a spatula to spread the mixture into an even layer.
- Scatter additional granola, coconut, and almonds over the top for texture and visual appeal.
- Let the sheet cool to room temperature, then refrigerate until the bark is fully set, about 2–3 hours.
- Break the set bark into pieces and store in an airtight container.
