An easy and delicious cilantro garlic hummus. Vegan, gluten-free, and nut-free.

Ingredients

  • 15 oz can garbanzo beans, washed and drained
  • 5 cloves garlic
  • 1 dried red chili pepper or 1 teaspoon chili flakes
  • 1 teaspoon black pepper
  • 1 teaspoon tahini
  • 1/2 teaspoon salt
  • 1 Tablespoon lime juice
  • 1/4 teaspoon kala namak (optional)
  • 1 cup chopped cilantro
  • 3 teaspoons olive oil
  • 1 teaspoon cayenne pepper

Instructions

  1. Heat 2 teaspoons of olive oil in a pan over medium-high heat.
  2. Add the dried red chili pepper (or chili flakes) and the garlic cloves.
  3. Cook the garlic for about 5 minutes, stirring occasionally, until softened and lightly golden.
  4. Add the drained garbanzo beans, black pepper, tahini, salt, and lime juice. Cook another 2 minutes, stirring to combine and warm the beans.
  5. Let the mixture cool slightly, then transfer to a blender or food processor. Add the chopped cilantro and a little water as needed and blend until smooth and creamy.
  6. Taste and adjust seasoning. Drizzle the remaining olive oil over the hummus and sprinkle with cayenne before serving.
