The idea for these came after enjoying a decadent fried cheese stick at a fair. I wanted to recreate that same indulgent, melty experience at home, and these mini bites are the result: crunchy, golden, and full of cheesy goodness. Ingredients

  • 12 mozzarella string cheese sticks, cut into bite-sized pieces
  • 1–1/2 cups Italian seasoned breadcrumbs
  • 1 cup flour
  • 2 large eggs
  • 1/4 cup milk
  • About 2 cups vegetable oil (for frying; roughly 2 inches in a skillet)
  • Optional for serving: 1 cup marinara sauce, warmed

Instructions

  1. In a medium bowl, whisk the eggs and milk together and set aside.
  2. Place the flour in a separate bowl and the breadcrumbs in another bowl.
  3. Working with one piece at a time, dredge a cheese bite in the flour, then dip it in the egg mixture, shaking off any excess. Roll it in the breadcrumbs to coat evenly. Repeat for all pieces and arrange them on a large sheet pan or plate.
  4. For extra crispiness, dip each coated piece once more in the egg, then in the breadcrumbs. Place the bites on the pan and freeze for 20–30 minutes so the coating firms up.
  5. Pour vegetable oil into a medium skillet to a depth of about 2 inches and heat over low heat. Line a plate or pan with paper towels for draining.
  6. Test the oil by flicking a pinch of flour into it—if it sizzles and browns slowly, the oil is ready. Keep the heat low so the cheese melts without bursting the coating.
  7. Carefully add 5–6 frozen bites to the oil, keeping them separated so they don’t stick. Watch closely and flip once. Fry until evenly golden brown, about 30 seconds per batch.
  8. Remove the bites with a slotted spoon and drain on paper towels. Repeat with the remaining pieces.
  9. Serve immediately with warm marinara sauce, if desired.

Tips: If you’ve never deep-fried at home, you don’t need special equipment. Use a medium skillet and keep the oil at a low, steady temperature. Fry a single test piece first to judge timing and temperature, and work in small batches so the oil temperature doesn’t drop too much.
