This Healthy 4-Ingredient Strawberry Ice Cream uses just fruit and a touch of vanilla extract, yet it achieves a creamy soft-serve texture. The secret is frozen bananas, which give the ice cream body and sweetness without any added sugar.

- 3 very ripe medium bananas, frozen
- 1/2 cup sliced strawberries, frozen
- 1/2 teaspoon vanilla extract
- 2 pitted dates soaked in water for 60 minutes
- Vanilla Roasted Strawberries optional
Instructions

Place all ingredients in a food processor and blend until smooth, scraping the sides as needed. Start pulsing to break up the frozen fruit, then increase speed and process until the mixture becomes creamy and soft-serve in texture. If the mixture is too thick, add a tablespoon of water or plant-based milk to help it blend.

Serve immediately for soft-serve consistency, or transfer to an airtight container and freeze for 1–2 hours for a firmer scoopable texture. Let sit a few minutes at room temperature before scooping if hardened.

Optionally, top with vanilla roasted strawberries or fresh sliced strawberries for added flavor and presentation.
