Ingredients
- 1 teaspoon olive oil
- 4 cups chopped kale
- 1 clove garlic, minced
- 2 cups chopped cooked chicken breast
- 3 cups Progresso chicken stock
- ¼ cup grated Parmesan cheese
- ¼ cup light Caesar dressing
- Additional Parmesan cheese, for serving
- Croutons (optional)
Instructions
- Heat a medium stockpot over medium heat and add the olive oil.
- Add the chopped kale and sauté for about 3 minutes, until slightly wilted.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the chopped cooked chicken and Progresso chicken stock, then bring to a gentle boil.
- Reduce heat to low and stir in the light Caesar dressing and the grated Parmesan until combined and heated through.
- Remove from heat and ladle into bowls.
- Top each bowl with extra Parmesan and croutons if desired.
