Homemade No-Bake Granola Bars

The quickest weekend project that sets you up for breakfast or snacks all week: my No Bake Granola Bars. These bars are entirely nut-free and rely on seeds for texture and flavor. They’re chewy, easy to make, and perfect for packing in lunches or keeping on hand for busy mornings.

Long before I started sharing recipes online I worked in agricultural research, where early mornings in the fields were routine. I experimented with many homemade granola bar recipes to bring as quick breakfasts. After revisiting those recipes and combining the best elements, I developed this reliable, nut-free, no bake granola bar that has become part of my regular meal prep.

These bars are now a weekly staple in my kitchen. They are straightforward to prepare and customizable based on the seeds and dried fruit you prefer.

Ingredients

  • Oats: 2 1/2 cups old fashioned rolled oats.
  • Pumpkin seeds (pepitas): 1 cup, raw and toasted.
  • Hemp hearts: 1/4 cup for a mild, earthy flavor; substitute an extra 1/4 cup chia seeds if you prefer.
  • Chia seeds: 1/4 cup for extra fiber and protein.
  • Dried cranberries: 1/2 cup. Any dried fruit will work — raisins, chopped apricots, or cherries are good alternatives.
  • Butter: 6 tablespoons melted. You can substitute an equal amount of coconut oil or avocado oil if you prefer.
  • Brown sugar: 1/2 cup light or dark.
  • Honey: 6 tablespoons to provide stickiness and hold the bars together.
  • Molasses: 2 tablespoons optional for depth and iron; replace with 2 additional tablespoons of honey if you omit it.
  • Cinnamon: 1 1/2 teaspoons optional — it pairs nicely with cranberries.

How to Make No Bake Granola Bars

  1. Lightly grease an 11×7‑inch baking pan and set aside.
  2. In a large skillet, combine the oats and pumpkin seeds. Toast over medium heat for about 4–5 minutes, stirring frequently, until the oats smell toasty and turn a light golden color. Transfer to a large bowl to cool slightly.
  3. Stir the hemp hearts, chia seeds, and dried cranberries into the cooled oat and seed mixture until evenly distributed.
  4. In a small saucepan over medium heat, combine the melted butter, brown sugar, honey, molasses (if using), and cinnamon. Heat until the mixture melts together and begins to bubble gently, stirring to dissolve the sugar.
  5. Pour the warm butter-and-sweetener mixture over the oat and seed mixture. Toss thoroughly so every piece is coated — it will be very sticky.
  6. Press the mixture firmly into the prepared pan, using the back of a spoon or a sheet of parchment to compress it evenly. Refrigerate for 30 minutes to set.
  7. After chilling, remove from the pan and cut into 16 bars: slice the pan in half lengthwise, then cut each half into eight bars. Wrap individually for easy grab-and-go snacks, or store as described below.

Storage and Make-Ahead Tips

  • Store at room temperature for up to 2 days. For longer storage, keep the bars in the refrigerator for up to 1 week.
  • Do not freeze — freezing changes the texture and can make the bars crumbly.
  • Make a batch a few days ahead: slice and wrap each bar in parchment or plastic wrap and refrigerate for an easy morning option.
