Wrapping the cabbage wedges in bacon lets the rendered fat seep into the leaves, infusing them with smoky, savory flavor. After roasting, a simple grate of Parmesan adds saltiness and a slightly nutty finish. Served with a knife and fork, they make a satisfying side or light main.

How to Make Bacon-Wrapped Roasted Cabbage Wedges

These are straightforward to prepare. Start with a head of cabbage: cut it in half, then cut each half into quarters to make wedges. You can adjust the wedge size to suit your needs, but quarters yield eight manageable pieces from a medium head.

  2. Cutting a half head into quarters gives wedges that cook evenly and are easy to serve; very large wedges will take much longer to cook and can be too big for one portion.
  3. Sprinkle grated Parmesan over the wedges right after they come out of the oven so it melts slightly and sticks to the bacon and cabbage.

Ingredients

  • 1/2 small/medium cabbage, quartered
  • 8 slices thick-cut smoky bacon
  • 1/4 cup Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp optional garlic powder, divided between wedges

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sprinkle Parmesan over the bacon side of the strips (the cheese will stick to the bacon). Add garlic powder if using.
  3. Wrap two strips of bacon around each cabbage wedge, placing the cheese-sprinkled side inward toward the cabbage. Secure with toothpicks and place wedges on a baking sheet with space between them.
  4. Bake until the cabbage is tender, about 35–40 minutes.
  5. Remove from the oven, grate additional Parmesan if desired, and serve warm.

Notes
