
These Cherry Hand Pies are irresistible: a crisp, flaky pastry with a crackling sugar crust and a saucy, vanilla-scented cherry filling. I wasn’t always a huge cherry-pie fan, but this simple combination changed my mind. They’re small, portable, and perfect when cherries are at their peak.
The idea came to me one summer after finding perfect cherries at a roadside stand. Since then these hand pies have become a favorite easy dessert to make each year.

How to make cherry hand pies
Begin by thawing the frozen puff pastry at room temperature for 30–40 minutes, until it unfolds easily but remains cold and pliable.
Make the cherry filling
Step 1: Make a cornstarch slurry. Whisk 1 teaspoon cornstarch with 1 teaspoon water and set aside.
Step 2: Cook the cherries. Pit and halve about 6 ounces (1½ cups) fresh sweet cherries. In a saucepan over medium heat, combine the cherries with 2 tablespoons sugar, 1 teaspoon fresh lemon juice, and a pinch of salt. Split a vanilla bean and scrape the seeds into the pot, then add the pod as well. Cook until the cherries release juice and begin to break down, about 5–7 minutes.
Cherry pitting hack
No cherry pitter? Use a chopstick or a reusable straw. Remove the stem, then push the straw or chopstick through the cherry to pop the pit out. Wear an apron—pitting can be messy!
Step 3: Thicken the sauce. Stir the cornstarch slurry into the saucepan and boil for 30–60 seconds, stirring constantly, until the filling thickens. Remove from heat and stir in 1/4 teaspoon almond extract. Let the filling cool, then remove the vanilla bean pod. To speed cooling, transfer the filling to a bowl and chill briefly in the refrigerator.
Prepare the puff pastry, assemble, and bake
Step 1: Cut the pastry. Unfold each sheet of thawed puff pastry and cut along the fold lines into thirds. Cut each third in half to yield six rectangles per sheet (twelve total). Arrange the pieces on a parchment-lined sheet pan.


Hot tip
Try to make the rectangles similar in size so the tops match the bottoms. Folding before cutting or using a ruler helps ensure even pieces.
Step 2: Make the sugar crust. Whisk 1 egg with 1 tablespoon cream, milk, or water to make an egg wash. Brush six of the rectangles with egg wash and sprinkle generously with coarse sugar (Demerara or turbinado). Press the sugar gently so it adheres, then flip those pieces over so the sugared side faces down.


Step 3: Fill. Spoon about 1–2 tablespoons of the cooled cherry filling into the center of each bottom piece, leaving a border so you can seal the edges.
Step 4: Seal. Brush the edges of the bottom rectangles with egg wash, place a second rectangle on top, align the edges, press to adhere, and crimp all around with a fork to seal.


Step 5: Egg wash & sugar. Brush the tops with egg wash, sprinkle more coarse sugar, and cut a few small vents into each top with a sharp knife or scissors.



Step 6: Chill. Freeze the assembled pies for about 20 minutes to help them hold their shape. Preheat the oven to 400°F toward the end of the chilling time.
Step 7: Bake. Bake until evenly golden and crisp on the bottom, about 20–25 minutes. Transfer to a cooling rack and let them rest at least 20 minutes before serving so the filling sets.


Variations & substitutions
Pastry: Use homemade puff pastry or a homemade pie crust if you prefer — the texture will differ but the pies will still be delicious.
Filling: Any fruit filling works well; swap cherries for berries, peaches, or apples if you like.
Flavorings: If you don’t have a vanilla bean, use vanilla extract added after cooking. If tree nuts are a concern, omit the almond extract.
Sugar: Any coarse sugar (sparkling sugar, turbinado) can replace Demerara. Granulated or brown sugar will work too, with a slightly different finish.
Serving suggestions
Serve warm, at room temperature, or chilled. Top with fresh whipped cream, crème fraîche whipped cream, or a scoop of vanilla ice cream for an extra-special treat.
Store the pies in an airtight container at room temperature for up to three days, or refrigerate if you prefer.

For the cherry filling:
