If I’m making a salad, the dressing has to be excellent. This avocado lime dressing fits the bill: it’s quick, flavorful, and ultra-creamy.

One of the best things about this recipe is how little hands-on time it needs. Just add the ingredients to a food processor or blender, pulse until smooth, and it’s done—no chopping or fussing required.

The ingredient list is short and flexible. If you keep avocados, garlic, olive oil, cilantro (or parsley), limes and water on hand, you can make this any night of the week.

  • Avocado — ripe, soft and creamy.

How to Make Creamy Avocado Dressing

Add the ripe avocado, garlic, olive oil, cilantro, lime juice and water to a food processor or blender. Season with salt and pepper.

Blend until smooth and creamy. Taste and adjust seasoning—add more salt, pepper or lime juice as needed. If you prefer a thinner, more pourable dressing, add water a tablespoon at a time until you reach the desired texture; you may need to rebalance salt and acidity after thinning.

Store in the refrigerator in a sealed container for up to one week. Stir or shake before serving if separation occurs.

How to Serve Lime Avocado Dressing

This dressing is very versatile. For the photos I tossed romaine with roasted corn, pickled red onions, cherry tomatoes and queso fresco then dressed it with the avocado lime dressing—bright, colorful, and delicious.
