I almost feel silly sharing this because it’s unbelievably simple, yet every time I bite into one I can’t help but smile.

I was at Bruster’s recently picking up ice cream when a poster caught my eye.
Why had I never thought to do this before? Why wasn’t I already at the store buying a stack of Oreos?
Side note — Is it strange when the teenager at Bruster’s knows your order before you finish saying it? Or when a brand-new employee recognizes what you always get? Maybe it’s a little odd, or maybe I’m just encouraging excellent customer service.
Either way, I was excited to try this easy frozen treat. I didn’t sample theirs (I stuck to my usual order), so I don’t know whether they use oversized cookies or just standard Oreos.
My vote is for regular Oreos — small, cute ice cream cookie sandwiches are perfect.

Ice cream.
Sprinkles.
Delicious — and done.
Use a 1.5-inch scoop to place a small ball of ice cream on the underside of a separated cookie, then gently press another cookie on top.

Play with different ice cream flavors. Chocolate is a must for me, and the variety keeps things interesting. These little sandwiches are also perfect for kids — a great portion-sized treat.
You can make a batch ahead of time and wrap each sandwich in wax paper before freezing, so they’re ready to grab whenever a craving hits.
