This Crockpot BBQ chicken with Italian dressing is a reliable, low-effort meal that always satisfies. Made with just three ingredients — chicken, BBQ sauce, and zesty Italian dressing — it slow-cooks until the chicken is tender and easy to shred. Pile it on buns for simple sandwiches or sliders, or serve alongside classic sides for an easy weeknight dinner.

Whether you’re meal prepping for the week or feeding a crowd, this recipe delivers. It’s perfect for game day, potlucks, or any casual meal when you want something hearty without fussing over the oven. A batch typically yields enough for about eight sandwiches, and leftovers reheat well the next day.
Kelsey’s Recipe Highlights
- Three ingredients: Just chicken, BBQ sauce, and Italian dressing.
- Hands-off cooking: Minimal prep — add ingredients to the slow cooker and let it do the work.
- Party friendly: Makes plenty for sandwiches or sliders to feed a group.
Ingredients
- Boneless skinless chicken breasts: About 3 pounds (roughly six breasts). The chicken cooks down to tender shredded meat.
- BBQ sauce: Use your favorite brand or style — sweet, smoky, or spicy all work well.
- Zesty Italian dressing: Adds tang and seasoning; zesty Italian is recommended but any Italian dressing will do.
- Cornstarch: Optional, to thicken the sauce slightly before serving.
See the recipe card below for exact quantities.

Equipment
A 6-quart slow cooker is ideal so you have plenty of room and leftovers. You’ll also want two forks or a chicken shredder to pull the cooked chicken apart easily.
To Serve
This zesty Italian BBQ chicken is great piled on hamburger buns or slider rolls. It also works well as a protein alongside baked beans and cornbread, or spooned over rice for a quick dinner.

Kelsey’s Top Tip
Shred the chicken while it’s still warm — it’s much easier straight from the slow cooker. If you’re not serving immediately, use the Keep Warm setting to hold the temperature. A hand mixer also works well for shredding in a pinch.

Crockpot BBQ Chicken with Italian Dressing
Equipment
-
Slow cooker
Ingredients
- 3 pounds boneless skinless chicken breasts about 6 breasts
- 12 ounces BBQ sauce
- ½ cup zesty Italian dressing
- 1 tablespoon corn starch optional
Instructions
-
Place chicken in the bottom of the slow cooker and pour the BBQ sauce and Italian dressing over the top.

-
Cook on low for 6–8 hours or on high for 4–6 hours. About 6 hours on low works well in most slow cookers.
-
When the chicken is done, remove the breasts and set them aside.
-
(Optional) Mix 1 tablespoon cornstarch with about ¼ cup of the cooking liquid until dissolved. Stir this into the slow cooker, cover, and cook on high for 20–30 minutes to thicken the sauce.
-
Shred the chicken with two forks, return it to the slow cooker, stir to coat with sauce, and serve.
