Ingredients

  • 3 pounds boneless skinless chicken breasts about 6 breasts
  • 12 ounces BBQ sauce
  • ½ cup zesty Italian dressing
  • 1 tablespoon corn starch optional

Instructions

  • Place chicken in the bottom of the slow cooker and pour the BBQ sauce and Italian dressing over the top.

  • Cook on low for 6–8 hours or on high for 4–6 hours. About 6 hours on low works well in most slow cookers.
  • When the chicken is done, remove the breasts and set them aside.
  • (Optional) Mix 1 tablespoon cornstarch with about ¼ cup of the cooking liquid until dissolved. Stir this into the slow cooker, cover, and cook on high for 20–30 minutes to thicken the sauce.
  • Shred the chicken with two forks, return it to the slow cooker, stir to coat with sauce, and serve.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for 3–4 days. Reheat gently in the microwave or on the stovetop with a splash of extra sauce or broth to keep the chicken moist. To freeze, cool completely, portion into freezer-safe containers or bags, and freeze for up to 3–4 months. Thaw overnight in the refrigerator before reheating.
